How do I dictate notes?

In the Notes App, just open a new note or edit an existing note and tap the microphone on the onscreen keyboard to dictate.

You can use the default Notes App, and use Microphone key in the onscreen keyboard to initiate dictation mode.

Then just speak normally to dictate to the App.

Or, get an App from the App Store that can do this.
