I have been recently getting a popup asking me to enter my password for "Apple to make changes" on my mac.
I have to click cancel 3 times before it will go away. Then it returns randomly?
Why is this happening and how do I stop this from happening please?

you may have installed malware or adware by accident.
Try running a scan with Malwarebytes:
You do not have to pay during the trial period, and after a short while it duns you a few times, then converts to the free version.
The valid form of that notice is <taskname> wants to make changes.
The one that says "Apple wants to make changes" is a SCAM, as you suspected.
