How do I transfer notes from old iPhone to new iPhone?

Turn on iCloud on both your iPhones.

If your Notes are in iPhone and not part of email accounts then
- Use AirDrop to transfer Notes from one iPhone to another
- Back up and restore
- Transfer Photos from iPhone to some email account in iPhone itself and then sync
- Or upload them to some drive (Files App, iCloud Drive, Google Drive, One Drive, Drop Box etc etc)
