It's taking too much space on my Mac and the pictures that take too much space on my Mac are from my iPad. What should I do to unlink Photos (without deleting them permanently) and free up some space?

You can sign out the Apple ID and password from iPad so that iPad and Mac will be disconnected , and from Mac see the storage space and if required use optimise feature or upgrade the iCloud storage https://support.apple.com/en-in/HT201318
