When you password protect a Pages (or PDF) document in your own account, part of that dialog is a check box to remember the password in your keychain. If that is selected, and as long as you double-click the document to open it in your account, then the operating system steps in and provides the password to automatically open the document. Outside of your own account, there will be a customary password challenge required.
