There is no way to delete the person by swiping, and no place under details to add a person...I saw answers from 2016 which do not apply to a newer phone. Help!

Nope, there is no ADD CONTACT option when you hit i and if you swipe right to left, it only shows the contact's info without any options to remove.
Add or remove someone from a group conversation:
Anyone in a group iMessage can add or remove someone from the conversation. You can remove a person from a group iMessage that has at least three other people. You can’t add or remove people from group MMS messages or group SMS messages.
