It does, but will not function for a boot sequence. You would have to have the 580 installed, and a second video card with proper Mac firmware. Both would be connected to your monitor. The Mac card will allow you to see the boot screen for installing or reinstalling the OS, or doing an Option key boot to select which drive you want to start up to. Then once at the desktop, you use whatever function is on the monitor to switch to the signal from the Metal capable card.
Much easier is to get a card that was made to support a Mac (I'm presuming you're talking about a 2010 Mac Pro). There are only two choices for that. The ATI Radeon 7950, and the GeForce GTX 680. That is, they're the only two with a full Mac bios so they support a boot screen.
The 7950 is hard to find and overpriced. The 680 can be found for about $230 or so on eBay. I have the 680 in my 2010 Mac Pro and it works fine. Either creates more heat than the stock cards you could purchase the Mac with, so expect to hear the fans more often.
If you go for the GTX 680, make sure you look specifically for the Mac Edition. There are lots of of them that are not Mac versions (won't work at all), or have been flashed with a Mac bios, which typically don't work for a boot screen.
