I share an iCloud with some family members. They can be nosie and I would hate for them to see all of my messages and photos. If I backup my things on iCloud would it show on their phones?

If you share an iCloud account with family members, they can see everything that is assorted with iCloud on your device. They can see your texts, reminders, calendar events, contacts, etc. iCloud accounts are not meant to be shared.
If you are sharing iCloud storage for backups with your family, no they cannot see any of your personal data in iCloud.
