How do I delete safari from my iPhone?
I don’t use it, and hate when I click a link from my email it opens the tab in safari.

It's not possible to delete Safari from the iPhone. It is set as the default web browser, that is why it opens when you click a link.
You can't change the default browser. Things are set as they are for many reasons, one of them being security. There is a saying; "a chain is only as strong s its weakest link". iOS is more secure than many other platforms and introducing an insecure default app could likely compromise that security. The best way to be at home in iOS is to "unlearn and relearn".
If you use a different app for email, you may be able to change which browser opens.
For example, in the gmail app, you can set Chrome as the default browser.
This option does not exist for the built-in Mail app.

That may be possible.. Google does own both gmail and Chrome. But, keep in mind that Google is, first and foremost, an advertising company. So, if you allow them to be the middleman in your email and web browsing habits, you're literally giving an advertising company everything they need to track and profile much of your life—this was why those apps were created.
