Can I control updates to Mac OS ?

I do not use some of the apps supplied with Mac OS, amongst them is iMovie and Keynote.

I seem to be finding that these apps are updating and slowing my machine down. Is it possible to delete items like these, that I do not use? Failing that can I control updates so as to not update stuff that I do not use?

If you want to delete eg Keynote: open Launchpad. Move the cursor to the app and click on the Option-key. You'll see a little x.

Click on it and then click on the option Delete

iMovie and Keynote can be deleted if you want. However, they rarely update which would be the only time they could slow your machine to any degree.
