Do "About This Mac..." and then click the "System Report..." button in the resulting window. That launches your System Information utility showing the cores on its opening page:

The first panel (Hardware Overview) to display will have a line named Total Number of Cores.

If you don't know the iMac you have then click the Apple symbol in the upper left of the display and click About this Mac. The information there will tell you what you need, the information will look similar to:
