How to see if multiple cores are being used?

I do some match computations using MATLAB. The computation may or may not make use of the four multiple cores I have. Suppose that it does make use of multiple cores. Is there a way I can see whether and how many cores are being used? I look at the Activity Monitor but cannot seem to determine how I can see if multiple cores are being used.

MacBook Pro 16″, macOS 12.2
