I have a shell script that finds a particular folder, then opens it in the Finder, but at different times it opens it in different views, e.g., icons, list, columns. How do I get it to always open the folder in a particular view?

Controlling finder from applescript isn't well documented. You can look into the Finder dictionary in applescript.

You would have to setup view options in the Finder itself for that particular folder.
You may be able to use AppleScript, but personally I would not recommend that approach. Here is an example:
