My iphone looks like it's connected in all ways, it may get my email once, but after that it says "the connection to the server failed." I've checked everything. If I check later in the day, it will say it was updated hours earlier, and will not update. I check everything again. Sometimes it will work, then the next time it won't. Which server is it referring to - apple or my carrier? Help

I was able to connect with an Apple Tech. After exhausting all other things, he had me turn off my WI-FI and go back to my mailbox. When I went back into my Inbox, the email appeared and updated instantly. For some reason my WI-FI wasn't allowing email update. He suggested I get in touch with my internet provider. Thanks for your help.

Neither it is referring to your mail provider server. Contact them or look at their support site.
