I see a pop up window when launching legacy app's like EPSON Scan saying that it is 32-bit and will be incompatible with future OS X releases. How do I survey all my app's to learn what to update or replace?

Option key down, Apple menu->System Information. Under Software, click on Applications.
There is a column header 64-bit (Intel). Click it to sort by this and you will see all the 32-bit applications together.

I found a lot of apps to clean out and contacted Adobe about their plans to upgrade.
