How do I take a screenshot on Macbook Pro with Touchbar on Windows?
On previous Macs (without touchbar) I've used Fn-(Alt)-Shift-F11
But, if I press Fn key, the F11 disappears.

From How to use function keys on MacBook Pro with Touch Bar - Apple Support, step 6 says...
Select "Use all F1, F2, etc. keys as standard function keys" to make the function keys appear continuously in the Touch Bar all the time. Deselect the checkbox to return the function keys to standard behavior.

AGAIN. If I press, Fn, then F11 dissapears (because of the Touchbar)
You could try Windows Icon > Windows Accessories > Snipping Tool
These solutions requires me to use another APP but no native shortcuts.
I was trying to find a way to use ONLY shortcuts.

fn + shift + f11 will capture the screen to the clipboard. Open an app and paste the screen capture.
