Changing Mail addreses

How do you correct the information about your correspondents in MAIL? I have to keep asking this because the answer is not to be found in MAIL, and I keep forgetting.

iMac 27", macOS 10.14

From Mail>Window>Previous Recipients you can remove wrong information here.

Verify in your Contacts.app the info you want is correct.

Well, I'll be. I was about tell you that the things your mentioned did not exist, but then I noticed "Window." I guess I'd seen it before, but I had no memory of it. Anyway, there is a "Window," and there is a "Previous Recipients," and there was a solution. Thanks.
