Sometimes I play on my phone until I fall asleep, and I found that some video app and game app will keep my device on until the next morning, is there anyway to stop these sleep prevention? So my phone will sleep according to what I set in the setting?

That should be a setting in the app, either in Settings/<app name> or a Settings "gear" in the app itself. If the app doesn't offer this feature then there's no way to do it.
