Recently by accident I changed my color scheme to a more vague and less vibrant scheme:
Now I have no idea how to change this back, and I really want to change it back to the original scheme.
Does anyone know how to fix this?

It's a slightly tortuous process, but you must have gone through it at some point in the past to change your default colour palette quite so dramatically 😬
The answer is buried in the Help files:
Then check out Save a Custom Fill:
The instructions above work for me, but post back if you need further help.

My colour palette is now back to normal 😁.
however my Touch Bar is still showing weird colors.
this was taken in Pages (its the same for Numbers and Keynote as well):
And this is form Safari:
So I probably messed something up there too......
Do you have any advice for this as well?

I've got exactly the same muted colours in my Pages Touch Bar (under "Simple") as you have, and the different, brighter palette in Safari. So I think those must be the defaults, although you can tap the small rainbow just to the right of the "close" cross for more options.
