Sorting by colors on Numbers

Colour, whether applied to text or as color fill in cells, is a format, Numbers will sort only on the content of cels in the column chosen as the sort key.

You could number cells, or enter the colour names, in one column to match the associated colour of that row, then sort on the numbered column.

You can export your Numbers spreadsheet to Excel, sort on colors, do what you need to do, then import back into Numbers. Whether or not it makes sense for you to do that depends on what you are trying to accomplish.
