Very laborious process trying to remove my friends information from her iPad that she gave me.

Your friend must go into the iPad's settings and log out of her iCloud account. After that, use the setting to completely erase all data. When that's done, the iPad will come back to the setup screen as if no one has ever used it before. From there, you can set the iPad up to your your iCloud account.
