take desktop files off of iCloud

I want to have my desktop files and folders on my computer, but not on icloud.

See the "Turn off Desktop & Documents" section (including the fine print) from Add your Desktop and Documents files to iCloud Drive - Apple Support


Note that there isn't an option to just turn off Desktop -- it's both or neither.
