I was wondering how long will the 2015 15" MacBook Pro keep receiving macOS updates for? From what I've heard it was discontinued last year, so does that mean it turns vintage from its discontinued date or the date that it was in production (2015)?

its not the 2015 hardware that's in question but the system version. I'd think you are good to go on that 2015 for another three to four years running High Sierra or Mojave.
Security updates are still being released for macOS 10.12 Sierra( 2017)
but not macOS 10.11 El Capitan (2016)—last update here was 09 Jul 2018.
This should give you the scope of coverage, two to three years.
