iPadPro Airdrop does not see MacBook Pro

Welcome to the Apple Support Communities. I understand that the iPad Pro using AirDrop does not display your MacBook Pro despite being seen and used by other Apple devices. You've done a lot of great steps already to narrow it down.

Even though a lot of these you've checked already, be sure to review the If you can't see the other device in AirDrop section: Use AirDrop on your Mac - Apple Support

Specifically,

Make sure that “Block all incoming connections” is turned off in Security & Privacy preferences of the receiving Mac.

Make sure that Personal Hotspot is turned off in Settings > Cellular of the receiving iOS device.

1. I have read your entire synopsis. My experience with Airdrop is, put simply, that it is not reliable. It will work with our five devices when it wants to, in at least 30% of the attempts, we have to email the files to ourselves.
