I’ve been seeing you can’t update series one watch’s anymore. Can someone help is it true or not

Not correct. The original first generation (before “Series 1”) is unable to handle WatchOS v5. All other versions from Series 1 onward are fully supported by current software. However there is much confusion about Series 1 so check exactly what you have, Identify your Apple Watch - Apple Support
