Set a default font for a new Numbers document

When I open a new document in Numbers 6.0 the font is always set to Helvetica. How can I set the default font for a new Numbers document to something else? I can't find any preferences for this, but I'm sure I'm missing something...there must be a way!? Thanks for any help/suggestions! Ian.

One easy way to have a new document formatted to your tastes is take an existing document and File > Save as Template.

Then when you start a new document File > New and choose your template under My Templates.

Note that you can also set table styles in the Table tab in the inspector pane at the right.
