FYI: If you keep your iPhone nearby, you can do EVERYTHING on the GPS only Apple Watch as you can do with the Cellular model.
The Cellular model, when away from your iPhone (such as out for a run, bike ride, swim, etc...) can still make phone calls, get messages, stream Apple Music, get weather data, etc...
