I volunteer at a charity thrift shop. We just received a Apple Watch series 2. I need to reset to factory settings but do not have the passcode for this watch. How do I bypass the passcode requirement?

You don't, it is in Activation Lock most likely. You need the person who donated it to do this: What to do before you sell, give away, or trade in your Apple Watch, or buy one from someone else - Apple Support
