Messages on iPhone got deleted
Why are the messages on the iPhone being deleted even if I chose keep messages forever?
What could've triggered this?

Assuming you mean SMS/iMessages: Do you have message sync enabled in Settings/<your name>/iCloud - Messages? And do you share your Apple ID with anyone? If you do they are probably deleting your messages, because they are shared with everyone who is logged in to the same iCloud account.
Assuming you mean email messages: Check the retention settings on the email server, and on any other devices that also access that email address.
