I would like to arrange the music on my iPhone into one list. Right now I have categories named artists, albums, compilations and downloaded music. I would like to consolidate them into one list. How do I do that?

When looking at the library in the music app tap the word Edit at the top right of the screen, then tap the ticks against the items you want to exclude. Click Done when ready.

If I do that, would I lose all the music in that particular category? And what are the three lines on the right hand side when I click on edit?

Those categories are simply different views of the same content. Turning one off doesn't delete anything. The three bar icons can be used to drag an item up or down the list to change the order.
