What gets reset in Settings

I can't figure out for the life of me what my password was for my encrypted backup. I'm trying to move my data from one iPhone to a new one, but apparently I have to reset my settings to do so. This is very, very, very, very annoying as I spent a lot of time customizing them. I can tolerate it though as long as I know what's being changed so I can take notes on what I have my current settings as and what I need to change back. So what gets changed?
