So since Apple is doing away with iTunes, what will happen to my encrypted phone backups containing health and workout data? How will I be able to backup that data without needing to upgrade my iCloud storage? (even though upgrading my iCloud storage is only $1 a month or something, I am barely over my 5 gig limit and don't feel that I need more than that if Apple would just allow me to manually save all of my photos, music, etc. outside of the cloud and then I can just manage what I want on the cloud from there...) Thanks for your help.

Back up, update, and restore through the Finder

Each time you connect a device, you can find it in the Finder sidebar.

From there you can back up, update, and restore your device.
