This is for the language of menus and dialogues of the OS. Support for reading and writing is much greater.

The big list in preferred languages includes everything that can be displayed, well over 100 I think, it depends on the fonts installed. Apple considers “support” to formally cover only the 35 or so system localizations.

I haven't found a complete list yet, but you can see them in Sys Prefs>Language & Region, click on little plus icon below Preferred Languages.
