I have a backup on my laptop and I’m trying to restore a new iPhone from it and I apparently hit encrypted and set a password which for the life of me I can’t remember, I thought it was my Apple ID password but apparently not. Note: my laptop currently doesn’t have internet access. How do I change it or get rid of it so I can back my new phone up?

You will have to guess the password. You get unlimited guesses; try passwords that you have used in the past, as the password, once set, never changes. To speed up the process uncheck Encrypt Backup and you will be prompted immediately.
