Can’t remember backup password

I have a backup on my laptop and I’m trying to restore a new iPhone from it and I apparently hit encrypted and set a password which for the life of me I can’t remember, I thought it was my Apple ID password but apparently not. Note: my laptop currently doesn’t have internet access. How do I change it or get rid of it so I can back my new phone up?

iPhone XS Max, iOS 12

Is this an Apple laptop? If so, check your keychain as when you first enable encryption in iTunes backup, you are prompted to store the password in your keychain.

You will have to guess the password. You get unlimited guesses; try passwords that you have used in the past, as the password, once set, never changes. To speed up the process uncheck Encrypt Backup and you will be prompted immediately. There's also a way to create a new backup with a new password; it's described in this Apple support article-->About encrypted backups in iTunes - Apple Support
