There seems to be a problem when I try to remove a specific contact from find my friends.
I tried also in other iOS devices and it happens also to a new iPhone I configured as new this week.
common sense actions like resetting all settings, killing the app or trying on another device have been already taken.

The error you're receiving indicates to me that there may be some sort of connectivity issue between your device(s) and the iCloud servers. If this is there are network related issues, or an outage with iCloud and its services, you may have trouble performing certain functions. There could also be issues with the network you're connected to.
To troubleshoot the possible connection issue, I recommend the steps in If you can't connect to the App Store, iTunes Store, or Apple Books - Apple Support, which not only help with iTunes and App store connectivity (as the title suggests), but also issues connecting to other Apple services (like iCloud and Find My Friends).

Thank you for your reply, but from my understanding it seems like there must have been some confusion about my post.
to clarify:
This happens on all iOS devices I have, from any possible network I tried and for one specific contact. All other contacts can be deleted properly.
there are no connectivity issues whatsoever when I try this.
