I am trying to find a tracking number for my MacBook Air order, so that I can pick it up at the UPS store instead of having it delivered. Cannot find a tracking number on any of my order information from Apple.

If that doesn't help, contact Apple directly by clicking on the Contact Support link at the upper-right of this website.

It appears that you have two choices only: delivery or pick up at an Apple store. So, you can contact Apple, but I doubt very seriously that they will allow it at this point (if the status is shipped, they certainly will not allow changes).
