One day I came home and my grandfather gave me an iPhone XS Max, however surprise it’s in demo mode and the tricky part is he got it from the flea market not a retail store. Help please🙃

That's a stolen phone. Turn it over to the police.
The only devices with a "demo mode" are those intended for display at retail stores. They are not to be sold.

OK, what you have is a phone that was stolen from an Apple store; those are the only phones that have a demo version of iOS. You should return it to Apple, as you are possessing stolen property, which is a crime.
It sounds like your grandfather was ripped off and sold stolen goods at the flea market. If it were me I would have your grandfather see if the same seller is there again and confront them (and get it on recording) to demand their money back and threaten to go to the police if otherwise.
Pretty much everywhere it is illegal to sell stolen goods and, as pointed out, that iPhone XS Max was stolen from an Apple Store as it is a floor display model.
It is still a stolen phone, regardless of where it came from.
An iPhone in demo mode should not be outside of an Apple Store. How you got it is not important. What is important is that you have a phone that should not have been sold or taken from an Apple Store. As noted, you need to return it to Apple.

I’m an sorry I was mistaken my mother just told me that it was from a pallet sale and it is not a stolen phone. I am sorry for the mix up.
