I have multiple email accounts on my iPhone, including exchange accounts. When I create a contact it seems to get associated to one of the email accounts at random without my input, not my iCloud account, so that when I remove one of those accounts I then lose a number of contacts.

How do i add contacts so they only associate with my icloud account (or control which account the new contact associated with)?
