When you restore iPhone from a iTunes backup, does the content of the apps get put back like they were before?

Does Backup to itunes Include the Full Apps or the App Data Only? When you back up to iTunes, does the backup include all the app data plus a pointer file to the App Store to get the apps or does it make a hard copy of the current version of the apps on your iPhone too? That’s a relevant question because some of the apps on our iphones may have been discontinued in the App Store, in which case they can’t be downloaded again.
