I currently have an IPhone XSMAX 64gb. I want to upgrade it to a 256gb. How much will I have to pay extra to get the upgrade? Will Apple accept my phone along with payment for an exchange for a 256gb XSmax?

If you've had your current phone for less than 2 weeks, you can return it.
If it's been longer, you need to sell it yourself and buy the larger phone.

You may strongly want to consider whether you need to look for a different model/capacity of iPhone at all.
You can buy an iCloud storage plan for a few dollars a month and use iCloud Photos and iCloud Messages to store the vast majority of your data on Apple's servers and mostly use your iPhone's built-in storage for apps and for small-sized low-resolution copies of your photos while the real full-size copy is kept and synced directly to and from iCloud.
