I have 2 work phones 1 for the US (VZW) 1 for Japan (Docomo) (one is US and one is out of Hong Kong)they are both XS) so dual sim. Since Docomo does not use Esim. Does anyone know if I can use Either my US or Hong Kong phone to put a VZW Esim on one of the phones and use a Japan SIM for the second line. Any limitations etc?

As long as the phones are unlocked, you can do it either way.
You should be able to setup the eSim with any compatible carrier as long as the phone is unlocked.

I believe the US phone will have one physical SIM, the other an eSIM. I believe the Japanese phone has two physical SIMs. If you wish to setup one of the phone to work for both, I would use the Japanese phone, since that would allow you to use two physical SIMs.
As explained in the support document, China does not support eSim at all. So the Xs and Xs max both have two physical sim slots.
For Hong Kong and Macau, the Xs has one physical sim card and one eSim, while the Xs Max has two physical sim slots.
Japan has no eSim restriction, so phones sold there also have one physical sim and one eSim.
I think that the only ones that could give you an appropriate answer are the carriers you were talking about (and/or you intend to use with your devices)
Contact and ask them.
