New to iPhone XR-help!

We were not able to completely set up my phone at the Target we bought from....we had already been there 2 hours, anyway, questions below:

Can't get my old text messages transferred
Some of the things I'm finding say to "erase" if it's already set up (looks like everything else is working, apps, etc.), I'm scared!
Will "erasing" make me start over with other things?

Messages I have recently got the iPhone SE and started using it before backing up my old phone now I noticed I am missing messaged from the last year. I have recently backed up my old phone but the messages have not shown up to my new phone. Am I going to have to reset the new phone that I have been using from a week to get messages and a couple pictures to show up?

Did you do this ? Transfer content from your previous iOS device to your new iPhone, iPad, or iPod touch - Apple Support
