Restore to new phone

I have backed ups to both iCloud and iTunes. Just bought a new phone, can/should I actually restore from both to ensure completeness?

You can restore from one or the other, not both. If you restore from one, then restore from the other, the first restore will be wiped out. Restoring completely erases all data and replaces it with the contents of the backup being restored.
