The only way to remove the Screen Time passcode is to restore the device to factory and set it up as new, not using a backup. The Screen Time passcode is part of the backup, and restoring the backup will just put the passcode right back on the device. While you could import photos to the computer and then sync them back with iTunes, you cannot save any other data. If you are using iCloud for Contacts and Calendar, when you sign back in with the Apple ID in iCloud, and turn Calendars & Contacts back on, they will come back. But Messages, and other backup data cannot.
