Deleting a e-mail address

When I try to sign in to iTunes Store the wrong email address shows...how do I change it?

However, when I try to update apps in the App store, the old email address still comes up. How do I change that to the new email address?

You can log out of an account by tapping on it in Settings > iTunes & App Store

If its app updates you are trying to download the id that shows will be the id that downloaded the app.
