So, I recently bought a MacBook Pro 8th-Gen and I didn't find out until after it arrived to my house that there was a discount for college students. I was wondering if there was anything Apple could do about that. I can prove that I'm a college student if necessary.

You have up to 14 days from receipt to return items you bought DIRECT from Apple, not from a Reseller.
Get your proof of ENROLLMENT (not just acceptance) in hand and go to the Apple Store or contact whatever DIRECT Apple outlet works for you and they will work with you.
If you bought from a Reseller, possibly at a different price, the Reseller's policies apply, and Apple can do nothing for you.
