Thanks for using Apple Support Communities! I use Siri to message my friends and family all the time, so I definitely understand wanting to know all your options about making changes to a message before sending it.
You can definitely change a message before sending by just saying "Change it." Siri will then prompt you say new/changed message. You can see more about using Siri here: Ask Siri on iPhone

Further, you can tap the message as it is displayed on the screen and type more into it or you can tell Siri "Add to it" and then whatever you say from that point will be added to the end of the already spoken/typed message

MVAN231 - you just made my job extra easy when I’m trying to use Siri to type. I was not aware that I could do that either so that’s an additional piece of information that helps make sending messages via Siri even easier! thank you so much for the additional information.
