I would like to update my iMac from 8gb of RAM to 32gb RAM (because this is maximum from what I see on the internet).
So, my model is: 27inch - Retina 5K - 6-core Intel Core i5 at 3,0 GHz
I would like to tell you that I don't look for something cheap, I want performance.
What model of ram you recomend me to use ? (link please)

Let's say your theory is good. But why on iMac PRO there already exists 256GB of ram ?
Probably because for most users who purchase iMac Pros, such as myself, price is not a limitation.
So do you recommend me to use just 64Gb of RAM, not 128Gb ?
If you think you need 128GB, then you should use it. FWIW, most people do not need 128GB however.

Another option, trade in your iMac, and buy the $2,300 iMac with SSD. The rams are user upgrade to 128 gigs.
I think the speed is very good: Up to 2500MB/s on Thunderbolt 3. Take a look again. Its faster than any FusionDrive existent on market.

FWIW, that is the option you can order from Apple. That does not preclude more RAM.
