Yes and yes. Now I’m realizing that when I open safari- google is my default for maps. Is there anyway to keep google as my search engine and change my map search to Apple Maps ?

I know that I have Google Maps and Apple Maps on my iPhone. When I am doing a search, Apple Maps comes up. I use Google as my Search Engine in Safari, but I've not noticed that Google Maps defaults there. If I try to search for an address in Safari, I'm getting Apple Maps. I'm not sure why you are getting this default to Google Maps. If you don't have Google Maps on your device, you shouldn't even get a choice. Have you tried Clearing History and Website Data?
