When you end your subscription, do you get to keep the music you put on your phone? If not, why?

No. Apple Music is a subscription service; you are not buying the music but if that is what you want to do, you can do that via the iTunes Store, whether or not you subscribe to Apple Music.

You retain rights to listen to Apple Music only as long as you continue to subscribe. That is the same as other music subscription services offered by 3rd parties.
